Onion Bhaji Burger Recipe:

Thinly slice the onions and place into a large bowl and cover with cold water and leave to soak for 4-5 minutes. In a separate large bowl add the turmeric, the gram flour, baking powder and a pinch of salt and pepper. Add in 100ml of cold water and mix. This is the batter, set aside for later.

To make the raita, break up the creamed coconut and add to a small bowl along with 2-3 tablespoons of boiling water. Mash with a fork until creamy. Using your hands squeeze out the excess water from cucumber over the sink and then add into the creamed coconut along with the mint sauce and mix.

Drain the onions and add to the bowl with the batter and mix well. Preheat a large frying pan with 2-3 tablespoons of vegetable oil and carefully spoon in the bhaji mix. You want 4 bhajis that are 1cm in thickness and will fit inside the rolls. Fry for 4-5 minutes on each side, until they are cooked through and golden.

Finely slice the coriander and green chili and set aside. Remove the root from the lettuce and thinly slice. Cut the ciabatta rolls in half and place into the oven to warm through for 2-3 minutes. To construct the burger, place a bhaji into each roll, spread over the mango chutney, the cut lettuce and spoonful’s of the coconut raita. Top with the green chili and coriander.
